Club Members Find a New Reason to Celebrate

Issue:
The scenic lakes and clubhouse at Deep Springs Trout Club make it a prime location for members’ events, but the makeshift bar service was not up to par. Guests are free to provide their own alcohol for private events, but since Deep Springs does not serve alcohol at their restaurant, drinks had to be served from buckets of ice on tables with plastic coverings.

 
Solution:
Private parties can account for 40-60% of food and beverage revenue for some clubs and have become a major focus for generating business.  As more and more members realize the cost savings of hosting private events through their club, versus a hotel ballroom, country club affairs have become an increasing trend.
Deep Springs Trout Club realized this opportunity and decided to upgrade their event offerings by purchasing a Geneva portable bar. Now when guests bring alcohol for their events, they can serve it from a real bar, enhancing the overall look and the experience for guests at the private party. The laminate bar is used both indoors and outdoors, overlooking the scenic lake– offering versatility to the club event schedule.

Casino Booms with Cooking Flair

Issue:
The food and beverage department is an important area of revenue for hotels and casinos. Casinos have seen major growth in this area as they expand their cuisine to serve more than the standard buffet.[1] Boomtown Casino and Hotel offered different types of dining options, but they needed a way to make their fine dining stand out as a one-of-a-kind experience.

Solution:
Boomtown Casino & Hotel chose a Geneva Flambe cart to infuse excitement into their steakhouse and also offer interaction stations for banquets. Now they can serve chicken, pasta, bananas foster, cherry jubilee, Steak Diane or even an entire meal tableside for their guests. When guests make a reservation for a flambé meal, they meet with the Chef de cuisine to design a personalized menu based on their tastes.

Using the flambé cart helps Boomtown Casino/Hotel up sell desserts and brings the dining room to life. Director of Hospitality Thomas Roberts says that when you see flames coming off that pan, it captures everyone’s attention with the sound and the visual. Anytime you bring the kitchen into the dining room it’s impactful, according to Roberts.

Does flambé cooking taste better though?

Flambé creates a special flavor because of the burning alcohol caramelizing sugar and evaporating water. Harold McGee, author of Food and Cooking: The Science and Lore of the Kitchen, says the flavors are smoothed out when food is made flambé style. Topping the Trends, Geneva Provides Real Life Solutions

Issue:
Over the years Long Term Care has become increasingly competitive. Since 2000 the number of older adults in group living facilities has declined as technological advances allow people to remain longer in the comfort of their homes. The long term care community has had to find innovative ways to attract new members amidst this “aging in place” trend.

Additionally, the emphasis on creating a dining experience has grown tremendously. Beyond providing the appropriate nutrition, meal service must reflect hospitality trends, maintain dignity and independence and improve the overall quality of life for residents. Sterile and awkward carts, previously used to distribute meals, no longer fit the bill. In order to stay ahead of the competition and provide the utmost in dining service, Maplewood Nursing and Rehabilitation decided to try a new approach to meal delivery.

Solution:
Maplewood Nursing and Rehabilitation changed the in-room dining experience through a hotel-like, personalized solution. They purchased the 67105 Geneva enclosed cart, which improved their service levels. Maplewood uses the cart at least 3 times a day and has provided room service for 8 visiting guests in a room at one time. The drop leaves make it easy to serve and satisfy additional guests on a moment’s notice.

Using Geneva’s enclosed cart versus an unattractive cart and cumbersome tray instantly removed the institutional look and contributed to an improved quality of life for the residents, according to Dining Services Director Michael Fall.

The cart has also improved the perception of touring families. Michael Fall says that when people see residents being served from a beautiful room service cart with flowers, they can tell it’s different from other facilities.

Offering the little extras and creating a signature in-room dining experience helps Maplewood show their higher standards to current and prospective residents and raise the bar for Long Term Care.
